WThis is a home-style version of a cocktail from the seasonal drinks list. This is a large-volume premix that's bursting full of tastes of a Christmas time, which makes it excellent for your festive gathering. Reserve the remaining cordial you can use for breakfast cocktails, puddings, or to mix additional servings of the drink.
The Bikini Cocktail
Makes enough for 10 people
Ingredients for the Clementine Syrup (makes 750ml)
300ml recently pressed clementine juice
200ml fresh lemon juice
500g fine sugar
To make the Drink (produces 850ml, enough for 10)
400ml good quality vodka
100ml dry gin
150ml peach-flavored liqueur
200ml citrus syrup (see above)
Fresh cranberries, as a garnish
Mandarin essential oil, as a final touch
Method
To prepare the Syrup: Put the listed components inside a saucepan, heat until it reaches a light boil, stirring so the sugar melts. Next, remove from the stove and leave to cool entirely. Pour to a sealable bottle, cap it and refrigerate it chilled, where it will keep for about a month.
To make Batch Mix: Combine every spirits and syrup into one big jug, allow it to infuse for 60 minutes, then pass it through preferably using a fine cloth, so it's completely strained.
When ready to serve: Pour 85ml of your batch mix into a stirring glass packed with ice, and agitate carefully for one minute to cool it down. Strain into a chilled martini glass or a similar vessel, garnish with some cranberries and finish by giving it a quick spritz of mandarin oil above the glass.
